ENKHELIS Rosé 2012

TASTING:
This vinified, cask matured rosé is a pink coral tinted colour. The bouquet is complex with hints of quince, honey and vanilla. The palate is generous and structured, which has a beautiful spicy, grilled finish. This rosé is perfect for fine food.

GRAPE VARIETIES:
Produced principally from old vines of Gre-nache (planted in 1956) and Tibouren (1958).
85 % Grenache, 15 % Tibouren

VINIFICATION:
Destemming, short maceration. Pneumatic pressing. Selection of first tasting juices. Decanting of worts at 15° for 24 h. Silt removal. Fermentation 18°in oak barrel.

AGEING:
80 % of production fermented and aged on lees in vat in new French oak barrels (Allier) of 400 l for 11 months.

FOOD PAIRING:
Serve between 10° and 12°. This goes well with a scallop risotto.
